Panoramic views elevate the beautifully crafted dishes created by a restaurateur couple whose hearts and souls have belonged to Barbados for year.
Tides Restaurant in Barbados is renowned for offering magical food in an elegant, waterfront setting – but its history is just as interesting. Chef Guy Beasley found his way to Barbados back in 1988 when he was working for the Coral Reef Club and Sandpiper Hotels. And it was on the island that he met his wife and business partner Tammie Marks, who was the food and beverage manager of Treasure Beach Hotel.
“When I met Guy it was clear we were both passionate about the restaurant industry,” says Tammie. “We both had such a focus on great food, great service and making people feel good. It was the perfect match.” They soon moved back to the UK to hone their craft - where they worked with the Roux brothers, Michel and Albert, the pioneers of remarkable French cuisine.
But soon the pull of the Caribbean proved too strong and they found their way back in the 90s and opened their first restaurant, Putters on the Green. But it was the launch of Tides back in 2000 which attracted the acclaim they had worked so hard for.
Offering seafood dishes with Asian touches and the freshest of ingredients – alongside their impressive seascape views - secured them a place on the ‘must visit’ list of restaurants on the island. Recently the venue underwent a remarkable refurbishment under the watchful eye of top architect, Michael Gomes.
“Our location has always been out biggest asset – we have almost 200 feet of ocean front – but we always want to evolve and not rest on our laurels,” Tammie tells. “In just ten weeks our amazing team of contractors elevated the space magnificently. My favourite spot is the courtyard with the fuchsia bougainvillea growing over the lounge seat. It has such a ‘wow factor’ as the colours contrast beautifully with the ocean.”
Tides has retained its classic elegance with a few modern touches including the spectacular Wedgewood chandeliers and bar-come-art gallery. This innovative look has given it a new lease of life – but it’s the heart, soul and passion of Guy and Tammie that makes the restaurant such a success.
The vibrant pair and their 75-strong team of highly skilled professionals - including new Chef, James Lindsay who has 16 years of experience in Michelin-starred restaurants – offer a quality dining experience with a view that you simply can’t beat.
