“Our Apes Hill ethos is built on a luxurious, yet sustainable lifestyle, where we infuse responsible practices into our endeavours to benefit our people, our planet and the local community,” explained Ed Paskins, golf course superintendent and sustainability expert. “Sustainability touches every facet of our resort and community, including our food and beverage offerings.
Apes Hill’s farm-to-fork menus are designed around the seasonal availability of produce, ensuring that every dish is crafted with the freshest and most sustainable ingredients. “Ultimately, we’re on a mission to provide fresh, healthy food while minimising environmental impact,” added Paskins. “We’ve installed bee hives across our community, for example, which have provided several yields of organic honey, often used in our ice creams and other desserts at The Noisy Cricket Bar and Restaurant.
Our focus on soil health also aids in our efforts to produce the healthiest crops including breadfruit, bananas, papaya, tomatoes, pineapple, cocoa, limes, mangoes, and a variety of herbs.” Apes Hill is reducing the food miles of its dishes by sourcing locally to decrease the distance food travels from the farm to the table, resulting in fresher food and a smaller carbon footprint.
Other sustainable efforts at the resort include the exploration of eco-friendly farming techniques with natural pest controls and the creation of habitats for biodiversity to increase pollination of their plants. Apes Hill also prioritises education and community involvement.
Tours are offered to educate members and guests about the significance of the land, organic farming practices, and the benefits of organic food to the pursuit of wellness.
